One of my favourite restaurants is Rosa Mexicano, Union Square, NYC where they prepare the guacamole fresh at your table. Having watched them do it a couple of times I thought “that’s easy!” and promptly attempted to recreate at home.
wasn’t good was a disaster. It’s so long ago since I tried, I can’t pinpoint where I might have gone wrong. For years, I didn’t even try again but buying it ready made from the grocery store definitely didn’t cut it. Then last week, as if she sensed my desperation for an awesome recipe; my avocado loving friend Erika aka Style Activist posted a recipe on her blog. lt inspired me to try again and let me tell you it came out dreamy. 3 ripe avocados, mashed
2 tomatoes, diced
1/2 large red onion, diced
1/2 large jalapeño, diced and seeded
1 1/2 lime juice
1/2 table spoon Coarse sea salt
1-2 tbsp fresh coriander/cilantro, chopped
1 large garlic clove, minced
