Welcome to the third segment of my collaboration with Ocado! We’ve had some amazing entries for the previous Instagram competitions which featured courgette & jersey royals. Now then. Hands up if you’ve ever been stuck in a food rut, cooking the same things over and over. Maybe because it’s just so tasty. Easy. And safe.
Hands down my favourite birthday present last year: It’s All Good by Gwyneth Paltrow and Julia Turshen. Delicious content, visually fresh and stunning. This book has truly inspired me to try out new things and I have committed to cook at least one recipe from it a month.
And here is the latest… drumroll…: pan fried sea bass with clementime salsa.
Yum!
1/2 cucumber, cut into small dice
4 clementines, peeled and cut into small dice
1/2 fresh red chili, finely minced
1/4 red onion, finely sliced
1 handful of chopped coriander/cilantro
6 mint leaves, finely sliced
the juice of 1 lime
coarse sea salt
Toss all ingredients into a bowl and mix ’em up. The scent is so fresh and fruity, I wanna bottle it up.
The fish
The original recipe calls for striped bass which I couldn’t find so I opted for a beautiful sea bass fillet and quite frankly, I think the salsa would compliment most fish.
Coat the fillet in crystal sea salt and olive oil on both sides. Pan fry over high heat, turning both sides. Approximately 4 minutes, depending on the thickness.
Serve the fish with the clementine salsa and wild rice.
